The ‘Tri-color’ Chicken Makhmali Kebab


This is another one of those signature recipe dishes that my mother in law cooks, she had prepared this during my last visit to Kolkata. Over time as I have come to know her, did I understand her love for cooking. She would just about make any new dish in her kitchen if she found it interesting and she still does. She tells me that when she cooks, she forgets her worldly worries :) This particular dish looks vibrant and so like the Italian flag..that I included the word Tricolor in the name there.
This kebab will suit the ‘Western’ palate as it goes slightly easy on the heat, but sure tastes brilliant nonetheless. 
Chicken Makhmali Kebab ready to be eaten
Ingredients ( Tricolor Chicken Makhmali Kebab)
  • Chicken- medium sized, boneless 12-15 pieces
  • Curd- 3 heaped Tbsp
  • Salt- 1 tsp
  • Roasted & Ground spices- 1 tsp (see below)
  • Cashew paste- 4-5 tsp
  • Ginger paste- 1/2 tsp
  • Garlic paste- 1 tsp
  • Onion paste- of 1 medium sized onion
  • Lemon juice- of 1 lemon
  • Vegetable oil- 2 Tbsp
  • Green chili paste- 1/3 rd tsp
Recipe ( Tricolor Chicken Makhmali Kebab)
  • Roll around the chicken pieces in this mixture in a bowl and marinate for 2- 3 hours.
  • Stick these pieces onto grill sticks or kebab sticks.
  • If desired , add red and green bell peppers (or capsicum) and onion peels cut into broad triangles. Stick them in between pieces of chicken.
  • Grill over medium to high for 10 minutes on both sides with a light drizzle of vegetable oil.
Roasted & Ground spice- Take these spices and dry roast them on a pan till the pan is medium hot.  Cubeb or tailed pepper 1 tsp+ Cinnamon 1 stick+ whole Green cardamom 6 pods+ whole Black cardamom 2 pods + whole Black cumin (shah jeera) 1 tsp+ whole White pepper 1 tsp + whole Mace 1 pc +Nutmeg (1/2 pod)+ whole Clove 1 pc. 
Ensure that your pan is not over heated, as this could burn the spices. Roast for couple of minutes at max and let it cool. Once cooled, grind this into a fine powder, to be used as the spice. It can be stored in an air tight container in the fridge to be used later in other recipes as well.

This is a double whammy of a dish. It is simply my take on a stuffed Bagel , one could stuff it with their desired kind of ingredients. I for one love the sesame crusted Bagels, to go with my Chicken Teriyaki .
