Minced Chicken n Prawn mini cakes- Recipe

This dish happened to us, on a weekday night! I say so because we were very happily surprised with the outcome of my little experiment on that evening. With some left over minced Chicken and about 200 g of Prawns in my freezer, I could make nothing out of them. Then I thought of blending the two together and balancing the flavors, and it did turn out to be quite palatable.
So to begin with, I threw in the Chicken and Prawns in the blender, with 1 chili, 1/2 inch of ginger, 1 teaspoon of garlic, for the binding 1 slice of bread (cut into pieces) and some salt. For some added color and heat one can also add some Red chili powder (optional). Within seconds, this blitz was ready. I removed the contents in a mixing bowl and added 1 egg, and mixed the ingredients together. This mixture needs to be slightly firm and form lumps, in the form of balls or mini cakes.
The Minced Chicken n Prawn mini cakes in all their glory!

Ingredients for Minced Chicken n Prawn mini cakes :
  • Chicken- 300 g , minced
  • Prawns- 200 g
  • Ginger- 1/2 inch cube
  • Garlic- 1 teaspoon
  • Bread- 1 slice
  • Salt- 3/4 teaspoon, or as per palate
  • Green chili- 1
  • Egg- 1 small
  • Lemon- cut into wedges
In a skillet I added vegetable oil and let it heat up well. To this I slowly placed the lumps and let them cook on one side completely without turning them. Once the bottom side is firm, I flipped them over and let them turn golden brown on all the sides. When ready, they were drained on paper towel and were served with lemon wedges, ready to be eaten.

At Jamjar Diner's on Friendship's Day

We visited Jamjar Diner's on the first Sunday of August, also known as the Friendships day, well whatever it is called we just need a reason to meet our friends. Due to it's increasing popularity the place was packed with guests that day. But we didnt budge either, since we had zeroed in on the location beforehand. We chose to wait our turn for about 20 minutes.  There happened to be about a small area in the bar section next to the big black telephone.  We ordered our craft beer of Gateway Brewery whilst we waited. I ordered for a White Zen while my partner went with a Doppelganger . He is already a huge fan of their beer. The drink was very refreshing, and I absolutely adored mine.  White Zen of Gateway Brewery at Jamjar Doppelganger of Gateway Brewery at Jamjar There was a huge turn up on that day,as it was a weekend. Friends and a lot of families were having a good time, while we were counting the minutes. Finally we got a place to sit up...

Day trip to Pompei from Rome!

Italy for travelers is like a  treasure trove! There is so much to see and absorb that time falls short. Southern Italy is known for it’s beauty- the Amalfi coast , Naples and the Island of Capri are gorgeous and cannot be missed. And in the heart of all of this, lies the 2000 year old ruins of a city named Pompei. Of course we have all heard of Pompei, of the thriving Roman city of ancient times which succumbed to the volcanic eruption of Mt. Vesuvius in the 79 A.D. and the city with it’s people were buried under ash and rock. This allowed for an exceptional preservation. Although the excavations are still underway, what we get to see are marvels in architecture and art. For a traveler who has planned a few days in southern Italy, Pompei would be easily accessible. All you need to do is reach the Circumvesuviana (which is a circular train line) that runs around Naples to Sorrento. It will take you there. On the other hand for travelers (like us) who have largely planne...

Stuffed Bagel with Chicken Teriyaki

This is a double whammy of a dish. It is simply my take on a stuffed Bagel , one could stuff it with their desired kind of ingredients. I for one love the sesame crusted Bagels, to go with my Chicken Teriyaki . It is quite a simple dish, yet full of flavor and serves as a heavy snack.                                           Stuffed Bagel ready to be eaten! A good Teriyaki sauce gives grilled chicken a rich auburn color. Our homemade version includes just the right amount of ginger to give it an equally appealing taste. While you can also use boneless breasts for this recipe, boneless thighs stay moister during grilling.
