Chicken Seekh Kebabs- DIY


Kebabs have always been one of my favorites..and Seekh kebab almost tops that list. Last month I got this special recipe passed down to me by my mum in law, well she is a great home cook to say the least :)
 I must say that I was overwhelmed with the final product :D It’s a reasonably simple recipe for such a delicious kebab and the taste is absolutely restaurant quality, I thought that I must share it..and here is my take on it-

                                Chicken Seekh Kebab ready to be eaten!

Ingredients for Chicken Seekh Kebab:
  • Minced chicken- 250 g
  • Salt- 1 and 1/2 tsp or as per palate
  • Roasted ground spices- 3-4 tsp
  • Ginger paste- 2 tsp
  • Garlic paste- 3 and 1/2 tsp
  • Curd- 5 Tbsp
  • Lemon juice- Juice of 1/2 a lemon
  • Red chili paste- 1/3 tsp
  • Green chili- 1 and half, finely chopped
  • Coriander leaves- finely chopped, few sprigs
  • Cumin powder- 1/2 tsp
  • Sattu or Roasted gram flour powder- 2 Tbsp (This will hold the mince together on the grill)
  • Vegetable oil- just a dash of oil

Roasted ground spice- Take these spices and dry roast them on a pan till the pan is medium hot.  Cubeb or tailed pepper 1 tsp+ Cinnamon 1 stick+ whole Green cardamom 6 pods+ whole Black cardamom 2 pods + whole Black cumin (shah jeera) 1 tsp+ whole White pepper 1 tsp + whole Mace 1 pc +Nutmeg (1/2 pod)+ whole Clove 1 pc
Ensure that your pan is not over heated, as this could burn the spices. Roast for couple of minutes at max and let it cool. Once cooled, grind this into a fine powder, to be used as the spice. It can be stored in an air tight container in the fridge to be used later in other recipes as well.
Mix well, this thick mince with all its contents. Adjust the content of Sattu. Over addition can cause the kebabs to get very firm, while less of it may lead the mince to break away while grilling and fall off. So the consistency is important here. Roll this thick mixture over the grill/ kebab sticks, so that they stay on the grill sticks. Brush over with some oil or ghee on all sides. Grill this for 10 mins on each side, till you get a color on the kebabs. Ref to pic above. :)

The bad ass buffet at Global Fusion!

I have been to Global Fusion over eight times and I confess that till date I have never been able to taste all the dish on their menu. Such is the 'vastness' of their buffet! The very first time that we had been to this place, we were in for a surprise with this vast spread, but we learnt this soon enough and for our forthcoming trips we have been relatively prepared, because one cannot be fully prepared for this vast array of Asian food choices.
