Spicy Indian inspired Grilled chicken


Most of the days I am really tired after a long day at work, so I just warm the left overs of the previous day and we have our dinner. But sometimes through the week, I feel the need to visit my kitchen and make something nice and kickback with a drink just to make the weekdays a little bearable. Well this one, I made on such a night.
Ingredients for Grilled Chicken:
Place these in a mortar and pestle/ grinder to make a fine powder
  • Black pepper- 1Tbsp
  • Paprika/ Red chili powder- 1Tbsp
  • Chipotle pepper- 1/2 tsp
  • Garam masala- 1Tbsp
  • Cumin seeds- 2 tsp
  • Oregano- 2 tsp
  • Salt- 1 and 1/4 tsp
  • Garlic cloves- 2 medium sized
Transfer this in a zip-loc bag, add 2 Tbsp of Lemon juice, and 2 Tbsp of Sour cream or Yogurt.
                                         

Spicy Indian inspired Grilled chicken 

Place the Chicken breasts (450 g )into this bag and rub the contents all over them. Leave this to marinate for about 40 mins to an hour.
Transfer these onto the baking dish. Drizzle 2 tbsp of Olive oil on the surface and grill for 15 minutes in a pre-heated oven. Turn the chicken breast back side up, and drizzle with some olive oil and grill for another 10 -15 mins.
Rest for 1 minute, and serve. I garnished it with some lemon wedges and Mayo which went as a good dip with this. You could even garnish with Cilantro or Coriander.

The bad ass buffet at Global Fusion!

I have been to Global Fusion over eight times and I confess that till date I have never been able to taste all the dish on their menu. Such is the 'vastness' of their buffet! The very first time that we had been to this place, we were in for a surprise with this vast spread, but we learnt this soon enough and for our forthcoming trips we have been relatively prepared, because one cannot be fully prepared for this vast array of Asian food choices. Chicken Seekh Kebabs- DIY

Kebabs have always been one of my favorites..and Seekh kebab almost tops that list.
